reftable: stop reading special refs via the filesystem in git-completion

In contrib/completion/git-completion.bash there's a bunch of instances where we read special refs like MERGE_HEAD, REVERT_HEAD and others via the filesystem. We should adapt the script to stop doing so and instead use plumbing commands.
