Update countries gem to latest version

Problem

We are using a very old version, 2.1.1 of the countries gem within the CDot application.

The latest gem version is 7.1.1 at the time of creation of the issue.

Proposal

We need to update the gem to the latest version to include/update the list of countries in the dropdown list.
