Support deploying Zoekt

Summary

We've recently added Zoekt as a subchart in the GitLab Charts.

For parity with our Helm Charts, let's ensure we can properly deploy this subchart (when enabled, as it's disabled by default).

Note that this is a relatively low priority given that the Zoekt chart is still under active development.

• Zoekt chart can be successfully deployed by the Operator when enabled
