Create catalog.json with complete cloud connector configuration for analytics purposes

As per https://gitlab.com/gitlab-data/analytics/-/issues/22464#note_2300760375, we want to generate a catalog.json that would contain a complete cloud connector structure in a single json file.

It would be generate similar to the legacy cloud_connector.yml file (every time when main branch is merged)

And the data analytics team would access it on the following url:
