Adding the `coverage` regex configuration option here might be misleading

@alberts-gitlab: We don't need this for this sample project, as the sample project is meant to demonstrate the coverage report feature (line 11 below).
@drew: In the docs we're not completely consistent; the Python and C++ examples have something like this and the rest don't. It sounds like this isn't something we're intending to display here for meaningful reasons, so I'm leaning towards agreeing with @alberts-gitlab and removing it.
