Refactor: Coment out databaseTrafficCapture defaults or document it as experiment

  I'd recommend as follow-ups:

  1. Completely comment out the databaseTrafficCapture default values from values.yaml. We don't need to explicitly set them to empty anymore.
  2. Alternatively, consider creating an internal-targeted documentation and completely remove those values from the values.yaml. I'd prefer us to foster documentation in doc/. I think it's ok to document internal experiments if we clarify that on docs and discourage its external usage.
     • We can also create it under doc/development/ to signal that this is not ready for production usage.
