Why is this change being made?

Changing naming conventions of SFDC objects for easier communication and less confusion

• SOWs Object => PSE Object
• POC => POV

@jdbeaumont here is the MR trying to get the changes into the handbook and around the failing pipelines. Your other MRs also had some additional changes too that I don't think you were trying to merge
