update emea territory table

@pidge Elsje had mentioned in a slack conversation that Toby should be completely removed (his off-boarding issue says 11 Jan which is why he hadn't been removed yet) from this table and that Philip McKenzie Smith had Nordics, BeNeLux and MENA.

Can you please take a look at the changes I made and confirm that the table is reflecting the correct and current state of EMEA territory ownership?
