Update People Group Engineering Handbook verbiage

Why is this change being made?

To update our documentation on some of the new and changed processes coming with the new system.

The most important sections are the removals, as the People Engineering team is no longer handling and thus removing this documentation:

  • Probation ending email.
  • CXC Contract renewal email
  • Netherlands contract renewal email (Temporary Contract Ending)

These will now be handled from within Workday by the People Tech Team.

We also are technically removing, LawLogix and ModernHealth, although decided to leave this in our codebase for the time being in case we run into errors with the new integrations.

These will now be handled by the integrations engineering team via Platypus. 🎉
