Upgrade prod ES cluster to latest stable (v5.5.2)

This is part of https://gitlab.com/gitlab-com/infrastructure/issues/1597

We're running v5.4.1 and this is a very good opportunity to upgrade the cluster while receiving production traffic and run a rolling upgrade - which should cause no downtime
