Use sidekiq-cluster through environment variable at Procfile (GDK)

With #170 (closed) in place we'll be able to make the change to the Procfile.erb in order to use/manage sidekiq-cluster instead sidekiq.

Documentation should point how to fallback to the old behavior (through ENV var).
