Add the new redis-session instance to the helm charts

We need to add capability to configure a separate Redis connection for sessions, alongside the existing ones

Refer to the MRs linked to #1248 (closed) for a closely related example.

This is not strictly blocked by #1310 (closed), but it will not be very useful without it.
