Fix the mapping/output of json.httpRequest.latency to be a number

In the pubsub-mlops-inf-gprd index, the field json.httpRequest.latency looks like this:

7.856731573s

Because of that, you can't actually do any queries on it or determine things like 'is this higher than this number', because it's a string.
