Remove influxdb

What does this MR do?

the backend library influxdb/influxdb-php is abandoned and you should use https://github.com/influxdata/influxdb-client-php.

There were a few more detailed email logs in the InfluxDB. So especially where they come from. There is currently no InfluxDB on the server, so the logs end up in nothing.

How confident are you it won't break things if deployed?
