Update GTK in F41 platform image

The F41 platform image has, I think, not been updated with the fix for https://gitlab.gnome.org/GNOME/gtk/-/issues/7091 , so that bug still happens with the flatpak build of Clocks. It would be good if we could have the platform image updated to have https://bodhi.fedoraproject.org/updates/FEDORA-2024-ef2a265dd9 with the fix for that bug.
