Add documentation for "non-standard" access to EESSI

There is a number of "non-standard" ways of accessing EESSI (e.g., squashfs) that can be useful if the standard installation is not possible or desirable. We should document these methods on the documentation pages and add some information and guidelines we already have on them from our internal testing.

Would be good to have this ready soon for upcoming meetings where this will be useful.
