Version 2.1.0 with edits for Unix tarballs

+ Has ci scripts to test various Linux-based Docker containers and
  release via GitLab Releases
+ Done after Windows setup*.exe was captured (2.1.0-windows)
+ Has some source code snapshots in CMakePresetsGenerated.json that are
  slightly ahead of Windows setup*.exe
