how to build packages? dpkg-buildpackage vs sbuild vs something else?

Right now we use dpkg-buildpackage directly. there are alternatives, trisquel appears to be using sbuild. debian too? however i'd like to understand how using dpkg-buildpackage fails before changing anything, so let's use this issue to track that
