Benchmark and performances

• use pgbench to create various scales : 8MB, 80MB, 800MB
• define multiple anonymization scenarios : inplace+pg_dump , anon_dump, etc.
• run the benchmark
• add warnings about perf in the documentation
• who "pays" the cost of anonymization
