Simplify manifest configuration using environment vars

This MR

  • puts $ENV{...} style placeholders into manifest and apparmor files to simplify CMake configuration
  • simplify CMakeLists.txt to pick manifest placeholder from env implicitly
  • requires Clickable 8.7.0 to support the new approach with non-CMake apps (see clickable!692)
