Update the demo chart to use the helm release in gitlab object names.

And allow the namespace to be passed in during helm install rather than forcefully created (at least for the gitlab namespace)

@markpundsack with this change, the sales demo probably needs to be using --namespace gitlab on helm install/upgrade if it isn't already.
