Use MyST and Sphinx Book Theme for documentation

MyST would allow to write the docs in Markdown, which is much more comfortable. Migrating the existing rst files to Markdown should not be an issue, either.

Also, using the Sphinx Book Theme would modernise the look, which is nice, and would be beneficial for #51 as well.
