Do not use master of our build tools, but a specific version instead

We do not want the CI to break randomly because a change on these tools; we need to control the version to use through the CI

I have create a "Pipeline Schedule" that will build master of definitions with master of buildstream and defs2bst, so those are still being tested periodically
