Expand Tuning Doccs

In order to minimize container differences, im now replacing the full top level nginx.conf, unfortunately for some reason this top level file (and the sub folders) differ between various types of nginx containers. This allows us to have greater control and stop instances of the default config overriding AA for some distros. I've also set aa to the stable train for some decent auto versioning
