multimedia/mkvtoolnix: FLAVORify port for GUI/non-GUI variants

Implements the suggestions from the ports-committers mailing list:
* Use FLAVOR instead of slave port for the non-GUI variant
* Call non-GUI variant "nogui" instead of "nox11"
