Run E2E against development lorry2 images

Currently this only runs against the main 'production' lorry2 image. It would be useful to be able to run against development versions on demand as well.

Add a CI env var which would allow for manual setting of this, as well as instructions on how to do it easily.

The CI var should get passed through to the helm chart correctly.
